feat: added Vite examples

This PR includes Vite examples, in particular:

Vite: Vanilla Javascript
Vite: Vanilla Tyescript

Also updated the general readme to reflect the addition.

# Coolify Configuration
1. Use `Nixpacks`.
2. Turn on `Is it a static site?`.
4. Set `Publish Directory` to `/dist`.
